Make authentic Thai Mango Sticky Rice at home with this simple, step-by-step recipe focusing on perfectly cooked sweet sticky rice and a creamy coconut sauce.

Ingredients

Scale
  • 1 cup glutinous sweet rice (sticky rice)
  • 1 cup water (for soaking)
  • 1 cup full-fat coconut milk (for soaking rice)
  • 1/2 cup full-fat coconut milk (for sauce)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 2 ripe mangoes, peeled and sliced
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear.
  2. Soak the rinsed rice in 1 cup of water for at least 4 hours, or preferably overnight.
  3. Drain the soaked rice completely.
  4. Steam the drained rice for 20 to 25 minutes until tender and cooked through. Alternatively, cook in a rice cooker with 1 cup of water until done.
  5. While the rice cooks, prepare the coconut sauce: In a small saucepan, combine the 1/2 cup coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar and salt dissolve. Do not boil.
  6. Remove the sauce from the heat. Stir in the cornstarch slurry. Return to low heat and stir constantly until the sauce thickens slightly. Remove from heat immediately.
  7. Transfer the hot, cooked sticky rice to a bowl. Pour about 3/4 of the prepared coconut sauce over the rice. Stir gently to combine, cover the bowl, and let it sit for 15 minutes to allow the rice to absorb the liquid.
  8. Serve the warm, sweetened sticky rice alongside slices of fresh, ripe mango.
  9. Drizzle the remaining coconut sauce over the rice and mango. Garnish with toasted sesame seeds.

Notes

  • Use only glutinous or sweet rice; regular rice will not work for this dessert.
  • For the best flavor, use full-fat canned coconut milk, not the refrigerated beverage type.
  • To toast sesame seeds, dry-roast them in a small pan over medium-low heat until fragrant and lightly browned.
