Make these perfectly portioned, juicy mini meatloaf muffins for a fast, family-friendly dinner. They cook quickly and are great for meal prep or busy weeknights.

Ingredients

Scale
  • 1.5 lbs ground beef (or ground turkey for turkey mini meatloaf)
  • 1 cup breadcrumbs (Ritz crackers work well)
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 1/4 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • For the Glaze: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, salt, pepper, 1/4 cup ketchup, Worcestershire sauce, and parsley. Mix gently with your hands until just combined. Do not overmix.
  3. Divide the meat mixture evenly among the 12 muffin cups, pressing lightly to form compact mini meatloaves.
  4. In a small bowl, whisk together the glaze ingredients: 1/2 cup ketchup, brown sugar, and apple cider vinegar.
  5. Spoon about one teaspoon of the glaze over the top of each mini meatloaf.
  6. Bake for 20 to 25 minutes, or until the internal temperature reaches 160 degrees Fahrenheit. Cooking time is faster than a full loaf.
  7. Let the meatloaf muffins rest in the pan for 5 minutes before carefully removing them. Serve immediately for a hearty family meal.

Notes

  • For freezer friendly meals, cool the baked mini meatloaves completely, then place them in an airtight container or freezer bag. They keep well for up to three months.
  • If you want a sheet pan meatloaf approach, form the mixture into one loaf shape on a foil-lined baking sheet and top with the glaze. Cooking time will increase to about 45 minutes.
  • These individual meatloaf servings are excellent topped with piped mashed potatoes before the final 5 minutes of baking for a classic look.
