Ingredients
Scale
1 1/2 cups warm water (about 105-115F)
1 teaspoon sugar
2 1/4 teaspoons active dry yeast
3 cups all-purpose flour plus more for dusting
1 teaspoon salt
1/4 cup plain yogurt
2 tablespoons olive oil plus more for brushing
4 tablespoons melted butter
2 cloves garlic minced
2 tablespoons fresh cilantro chopped
Instructions
Combine the warm water, sugar, and yeast in a large bowl. Let stand for 5 to 10 minutes until foamy.
Stir in the flour, salt, yogurt, and 2 tablespoons of olive oil into the yeast mixture. Mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a damp towel and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball.
On a floured surface, roll each ball into an oval or teardrop shape, about 1/8 inch thick.
Heat a dry cast iron skillet or heavy-bottomed pan over medium-high heat until very hot.
Place one rolled naan into the hot skillet. Cook for 1 to 2 minutes per side, until bubbles form and brown spots appear. The naan should puff up slightly.
While the naan cooks, mix the melted butter, minced garlic, and chopped cilantro in a small bowl.
Remove the cooked naan from the skillet and immediately brush generously with the garlic butter mixture.
Repeat with the remaining dough pieces, brushing each one with garlic butter as it comes out of the pan.
Notes
For a quicker rise, place the dough in an oven that has been briefly warmed (and then turned off).
If you do not have yeast, you can search for a ‘No Yeast Naan’ variation using baking powder.
Brush the cooked naan with plain melted butter instead of garlic butter for a simple butter naan.
Use this dough as a base for quick naan pizza by topping it before the final cooking step.
