Make simple, portion-controlled banana bites dipped in chocolate without using an oven. These are great for a quick snack or dessert.

Ingredients

Scale
  • 3 large ripe bananas
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons coconut oil
  • 1/4 cup creamy peanut butter
  • 1 tablespoon powdered sugar (optional, for swirl)

Instructions

  1. Peel the bananas and slice each into 4 equal pieces, creating 12 total bites.
  2. Place the banana pieces on a baking sheet lined with parchment paper. Freeze for at least 2 hours until solid.
  3. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely smooth.
  4. In a separate small bowl, mix the peanut butter with the powdered sugar, if using, until smooth. Place this mixture into a small zip-top bag and snip a tiny corner off for piping.
  5. Remove the frozen banana bites from the freezer. Working quickly, dip each frozen banana piece into the melted chocolate, ensuring full coverage.
  6. Place the dipped bites back onto the parchment-lined sheet.
  7. Immediately pipe thin lines of the peanut butter mixture across the top of the chocolate coating on each bite. Use a toothpick to gently swirl the peanut butter into the chocolate if desired.
  8. Return the bites to the freezer for at least 30 minutes to set the chocolate coating completely.
  9. Store the finished bites in an airtight container in the freezer.

Notes

  • Use firm, slightly under-ripe bananas for the best results when dipping.
  • If you do not have coconut oil, you can use vegetable shortening for a smoother chocolate coating.
  • For a vegan version, use dairy-free chocolate chips.
