Make these simple, chewy bars that combine bright lemon zest and juice with sweet dates and crunchy almonds. No oven is needed for this quick treat.

Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup packed Medjool dates, pitted
  • 1/2 cup rolled oats (ensure gluten-free if needed)
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon sea salt
  • 2 tablespoons shredded unsweetened coconut (optional, for topping)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Place the almonds in a food processor and pulse until they form a coarse, crumbly meal. Do not over-process into butter.
  3. Add the pitted dates, rolled oats, lemon juice, lemon zest, and salt to the food processor.
  4. Process the mixture until it comes together into a sticky, uniform dough. You may need to stop and scrape down the sides.
  5. Press the dough evenly and firmly into the prepared pan. Use the bottom of a glass or measuring cup to compact it well.
  6. Sprinkle the shredded coconut over the top, if using, and press lightly into the surface.
  7. Refrigerate the bars for at least 2 hours, or until firm enough to slice cleanly.
  8. Lift the parchment paper overhang to remove the block from the pan. Cut into 12 or 16 bars.

Notes

  • For a stronger lemon flavor, add 1 teaspoon of lemon extract along with the juice.
  • If your dates are dry, soak them in hot water for 10 minutes, drain well, and pat dry before using.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
