Ingredients
Scale
1 1/2 cups graham cracker crumbs
1/4 cup melted unsalted butter
8 ounces cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup fresh lemon juice
1 tablespoon lemon zest
1 cup frozen whipped topping, thawed
Instructions
Mix the graham cracker crumbs and melted butter in a small bowl until combined.
Press about 1 tablespoon of the crumb mixture into the bottom of six small serving cups or ramekins. Place the cups in the refrigerator while you prepare the filling.
In a medium bowl, beat the softened cream cheese until smooth.
Gradually beat in the sweetened condensed milk until fully incorporated.
Stir in the fresh lemon juice and lemon zest until the mixture thickens slightly.
Gently fold in the thawed whipped topping until just combined. Do not overmix.
Spoon or pipe the lemon filling evenly over the crusts in the prepared cups.
Chill the cups for at least 2 hours, or until firm.
Garnish with extra lemon zest before serving.
Notes
You can substitute vanilla wafers for the graham crackers if you prefer a different crust flavor.
For a firmer set, use only half of the whipped topping in the filling and reserve the other half for topping before chilling.
Make these cups up to one day ahead for easy party preparation.
