Prepare this simple, flavorful salmon dish entirely on one pan. Salmon fillets are stuffed with a creamy mixture of spinach and feta cheese and baked until tender.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 cup fresh spinach, finely chopped
  • 4 ounces cream cheese, softened
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon dried dill

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels. Place them on the prepared baking sheet.
  3. In a small bowl, combine the chopped spinach, softened cream cheese, feta cheese, minced garlic, lemon juice, and dried dill. Mix until the filling is uniform and creamy.
  4. Using a sharp knife, cut a pocket into the thickest side of each salmon fillet, being careful not to cut all the way through to the bottom.
  5. Spoon the spinach feta mixture evenly into the pockets of the salmon fillets.
  6. Drizzle the tops of the stuffed salmon with olive oil and season lightly with salt and pepper.
  7. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time depends on the thickness of your fillets.
  8. Remove from the oven and serve immediately.

Notes

  • For a complete one-pan meal, add asparagus or cherry tomatoes to the baking sheet around the salmon for the last 10 minutes of cooking.
  • Do not overbake the salmon; check for doneness early to keep it moist.
  • You can substitute mozzarella for some of the feta if you prefer a milder flavor.
