Toss the quartered potatoes with 1 teaspoon of olive oil, salt, and pepper on a large rimmed baking sheet. Spread them in a single layer.
Roast the potatoes for 15 minutes until they begin to soften.
While potatoes roast, pat the steak cubes dry and season them generously with salt, pepper, oregano, and thyme.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Do not brown the garlic. Remove from heat.
Remove the baking sheet from the oven. Push the potatoes to one side of the pan. Add the seasoned steak bites to the empty space on the pan, ensuring they are in a single layer.
Brush half of the garlic butter mixture over the steak bites.
Return the pan to the oven and roast for another 8 to 12 minutes, depending on your desired doneness for medium-rare steak (about 130°F internal temperature).
Remove the pan from the oven. Drizzle the remaining garlic butter over the steak and potatoes. Toss everything gently on the pan.
Garnish with fresh chopped parsley before serving immediately.
Notes
For extra flavor, add 1 cup of broccoli florets or sliced mushrooms during the last 5 minutes of cooking.
If you prefer a crispier potato exterior, you can parboil the potatoes for 5 minutes before tossing them with oil and roasting.
Use a cast iron skillet if you prefer to sear the steak bites on the stovetop before transferring the entire pan to the oven to finish cooking the potatoes.
