Cook tender beef, crisp broccoli, and savory ramen noodles all in one pot for a quick, flavorful weeknight meal with minimal cleanup.

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 4 cups beef broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 2 packages (3 ounces each) instant ramen noodles, seasoning packets discarded
  • 2 cups fresh broccoli florets
  • 1/4 cup water (for slurry)

Instructions

  1. In a large pot or deep skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the minced garlic and grated ginger to the pot with the beef. Cook for 1 minute until fragrant.
  3. In a separate small bowl, whisk together the beef broth, soy sauce, brown sugar, rice vinegar, sesame oil, and cornstarch until the cornstarch is dissolved. This is your sauce base.
  4. Pour the sauce base over the beef mixture in the pot. Bring the liquid to a simmer.
  5. Add the broccoli florets to the simmering liquid. Cook for 3 minutes.
  6. Break the ramen noodles into halves and add them to the pot. Stir gently to submerge the noodles in the liquid.
  7. Cover the pot and cook for 4 to 6 minutes, or until the noodles are tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  8. If the sauce is too thin, mix 1 tablespoon of cornstarch with 1/4 cup of water to create a slurry. Stir the slurry into the simmering mixture and cook until the sauce thickens slightly.
  9. Remove from heat and serve immediately directly from the pot.

Notes

  • You can substitute ground beef with thinly sliced sirloin steak if preferred; add the steak after the garlic and ginger and cook until just browned before adding the liquid.
  • For extra flavor, add a pinch of red pepper flakes with the garlic and ginger.
  • If you prefer softer broccoli, add it during the last 2 minutes of the noodle cooking time.
