Make this simple, satisfying one-pot meal featuring cheese tortellini cooked in a rich garlic butter cream sauce with sweet peas. It requires minimal cleanup.

Ingredients

Scale
  • 1 (20 ounce) package refrigerated cheese tortellini
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 cup frozen peas
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  3. Pour in the broth and bring the mixture to a simmer.
  4. Add the tortellini to the pot. Cook according to package directions, usually about 5 to 7 minutes, stirring occasionally to prevent sticking.
  5. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  6. Add the frozen peas and cook for 2 minutes until the peas are heated through.
  7. Season with black pepper and salt to your taste.
  8. Serve immediately with extra Parmesan cheese on top.

Notes

  • If the sauce seems too thick, add a splash more broth or cream until you reach your desired consistency.
  • You can substitute half-and-half for heavy cream, but the sauce will be slightly thinner.
  • Use fresh tortellini for the best texture in this quick cooking method.
