Enjoy a hearty and flavorful Quinoa Stuffed Acorn Squash. This vegetarian dish is perfect for a cozy fall dinner, bringing together the natural sweetness of acorn squash with a savory quinoa filling.

Ingredients

Scale
  • 2 medium acorn squash
  • 1 tablespoon olive oil
  • 1 cup cooked quinoa
  • 1/2 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon cinnamon
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut each acorn squash in half lengthwise. Scoop out the seeds and stringy bits.
  3. Place the squash halves cut-side up on a baking sheet.
  4. Drizzle the cut surfaces with olive oil and season with salt and pepper.
  5. Bake for 45-60 minutes, or until the squash is tender when pierced with a fork.
  6. While the squash is baking, prepare the filling. In a medium bowl, combine the cooked quinoa, chopped walnuts, dried cranberries, chopped parsley, and cinnamon.
  7. Season the quinoa mixture with salt and pepper to your liking.
  8. Once the squash is tender, carefully remove it from the oven.
  9. Spoon the quinoa filling generously into the cavities of the baked acorn squash halves.
  10. Return the stuffed squash to the oven for another 10-15 minutes, or until the filling is heated through and the top is lightly golden.
  11. Serve warm and enjoy your delicious meal!

Notes

  • You can toast the walnuts for a deeper flavor before adding them to the filling.
  • Feel free to add other vegetables like sautéed onions or spinach to the quinoa mixture.
  • A drizzle of maple syrup over the top before serving can add extra sweetness.
