Ingredients
Scale
8 large flour tortillas
1 cup cooked breakfast sausage, crumbled
1 cup cooked bacon, crumbled
1.5 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large sheet pan or line it with parchment paper.
In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
Lay four tortillas flat on the prepared sheet pan.
Divide the sausage, bacon, and half of the cheese evenly over the four tortillas, leaving a 1-inch border around the edges.
Fold the tortillas in half to create four semi-circles.
Pour about 2 tablespoons of the egg mixture over the center of each folded tortilla, letting it seep into the filling slightly.
Top each folded tortilla with the remaining cheese.
Place the remaining four tortillas on top of the filled ones, pressing down gently.
Brush the tops of the quesadillas lightly with olive oil.
Bake for 12 to 15 minutes, or until the tortillas are golden brown and the egg filling is set.
Carefully remove the sheet pan from the oven. Let the quesadillas cool for 5 minutes before slicing each one in half diagonally.
Notes
For crispier bottoms, you can flip the quesadillas halfway through the baking time, around 7 minutes.
These freeze well; wrap individual portions tightly in plastic wrap and foil before placing them in a freezer bag for up to two months. Reheat in a toaster oven or microwave.
Substitute the meat with black beans and diced bell peppers for a vegetarian option.
