Bake fluffy pancakes all at once on a sheet pan. This recipe skips the stovetop flipping, making it the easiest breakfast for a large family or brunch gathering. Customize with your favorite toppings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup melted butter, plus more for greasing
  • 2 teaspoons vanilla extract
  • Optional toppings: 1 cup fresh berries, 1/2 cup chocolate chips, or cinnamon sugar mixture

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Generously grease a standard 13×18 inch rimmed baking sheet with butter or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the eggs, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a whisk or spatula until just combined. Do not overmix; a few lumps are fine for fluffy pancakes.
  5. Pour the batter evenly onto the prepared baking sheet, spreading it to cover the entire surface.
  6. If using toppings, sprinkle them evenly over the batter now. For fruit or chocolate chips, press them lightly into the surface. For a cinnamon swirl, drizzle a thin layer of cinnamon-sugar mixture over the top.
  7. Bake for 15 to 20 minutes, or until the edges are set and the center springs back lightly when touched.
  8. Remove the pan from the oven. Let cool for a few minutes before slicing into squares for serving. Serve warm with maple syrup.

Notes

  • For a quick hack, substitute the dry ingredients with 2 cups of your favorite pancake mix, following the package directions for liquid amounts, then bake as directed.
  • This recipe is great for meal prep. Store cooled leftovers in an airtight container and reheat briefly in the toaster oven.
  • You can easily make this a dessert sheet pan pancake by adding a powdered sugar glaze after baking.
