Ingredients
Scale
4 lbs Russet potatoes, peeled and quartered
1 cup chicken broth or water
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter, cut into pieces
4 cloves garlic, minced
8 ounces cream cheese, softened and cubed
1/2 cup heavy cream or milk
Instructions
Place the peeled and quartered potatoes into the slow cooker insert.
Pour the chicken broth or water over the potatoes. Sprinkle with salt and pepper.
Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the potatoes are very tender when pierced with a fork.
Drain off any excess liquid from the slow cooker.
Add the butter, minced garlic, softened cream cheese, and heavy cream to the potatoes.
Using a potato masher or an electric hand mixer on low speed, mash and mix the ingredients until smooth and creamy. Do not overmix.
Taste and adjust salt and pepper if needed. Keep warm on the ‘Keep Warm’ setting until ready to serve.
Notes
For extra flavor, add 1/2 cup grated Parmesan cheese along with the cream cheese.
If you need to make these ahead, cool them completely, then store them in an airtight container in the refrigerator for up to two days. Reheat slowly in the slow cooker on low, adding a splash more cream if they seem dry.
If you prefer a smoother texture, use a potato ricer before adding the dairy ingredients.
