Make a rich, creamy cheesecake that combines the warm spice of snickerdoodle cookies with a smooth, tangy filling, all set on a buttery cinnamon-sugar crust.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon (for crust)
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon (for filling)
  • 1/4 teaspoon ground nutmeg
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon (for topping swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Wrap the outside of a 9-inch springform pan tightly with heavy-duty aluminum foil for a water bath.
  2. Prepare the crust: Mix graham cracker crumbs, 1/4 cup granulated sugar, brown sugar, 1 teaspoon cinnamon, and melted butter until combined. Press the mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes. Remove and let cool slightly.
  3. Prepare the filling: In a large bowl, beat the softened cream cheese until smooth. Gradually beat in 1 1/2 cups sugar and flour until just combined. Mix in vanilla extract, 1 teaspoon cinnamon, and nutmeg. Beat in the eggs one at a time, mixing only until each is incorporated. Stir in the sour cream. Do not overmix.
  4. Pour half of the cheesecake filling over the cooled crust.
  5. Mix the remaining 1/4 cup sugar and 1 teaspoon cinnamon together. Sprinkle this mixture evenly over the filling layer. Pour the remaining cheesecake filling on top.
  6. Create the swirl: Dollop small spoonfuls of the topping mixture (if you reserved any, otherwise use a small amount of extra cinnamon sugar) randomly over the top layer. Use a knife or skewer to gently swirl the topping into the filling.
  7. Place the springform pan inside a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan.
  8. Bake for 60 to 75 minutes, or until the edges are set but the center still jiggles slightly.
  9. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  10. Remove the cheesecake from the water bath and let it cool completely on a wire rack. Refrigerate for at least 6 hours, preferably overnight, before serving.

Notes

  • For the creamiest texture, bring your cream cheese, eggs, and sour cream to room temperature before starting.
  • If you do not have graham crackers, you can substitute with crushed vanilla wafers or shortbread cookies for the crust.
  • To prevent cracking, do not open the oven door during the first 45 minutes of baking.
