Ingredients
Scale
1 medium butternut squash, peeled, seeded, and cubed
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon smoked paprika
Salt and black pepper to taste
8 small corn tortillas
1/4 cup chopped fresh cilantro
1/4 cup crumbled cotija cheese (optional, for vegetarian)
Lime wedges, for serving
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the butternut squash cubes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper until evenly coated.
Spread the seasoned squash in a single layer on a baking sheet.
Roast for 20-25 minutes, or until the squash is tender and slightly caramelized, flipping halfway through.
Warm the corn tortillas according to package directions (you can warm them in a dry skillet, microwave, or oven).
Fill each warm tortilla with the roasted butternut squash.
Top with fresh cilantro and cotija cheese, if using.
Serve immediately with lime wedges on the side.
Notes
For an extra kick, add a pinch of cayenne pepper to the squash seasoning.
If you prefer a softer taco, you can steam the tortillas briefly before filling.
Feel free to add other toppings like diced red onion, avocado, or a dollop of sour cream.
