Ingredients
Scale
2 large ripe mangoes, diced
1/2 red onion, finely diced
1 habanero pepper, seeded and minced (use gloves)
1/2 cup fresh cilantro, chopped
1/4 cup fresh lime juice (about 2 limes)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Prepare the mangoes by peeling and dicing them into small, uniform pieces. Place the diced mango in a medium bowl.
Finely dice the red onion. If you prefer less sharp flavor, soak the diced onion in cold water for five minutes, then drain well. Add the onion to the mango.
Carefully mince the habanero pepper. Remove all seeds and white membrane for less heat, or leave some in for more heat. Add the minced pepper to the bowl.
Chop the fresh cilantro and add it to the mixture.
Pour the fresh lime juice over the ingredients.
Add the salt and pepper.
Gently fold all ingredients together until just combined. Avoid overmixing to keep the mango pieces intact.
Taste the salsa and adjust salt or lime juice as needed.
Cover the salsa and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
For a milder salsa, substitute the habanero with one jalapeƱo pepper.
If you want a smoother texture, pulse half of the mixture lightly in a food processor before folding it back into the diced ingredients.
Store leftovers in an airtight container in the refrigerator for up to three days.
