Ingredients
Scale
4 ears of corn, husked
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup finely chopped jalapeños (seeds removed for less heat)
2 tablespoons finely chopped fresh cilantro
1 tablespoon chili powder, plus more for dusting
1 teaspoon lime juice
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional, for extra heat)
Salt to taste
Crumbled cotija cheese or queso fresco for topping
Lime wedges for serving
Instructions
Preheat your grill to medium-high heat or prepare your broiler.
Grill or broil the corn until lightly charred on all sides, about 8-10 minutes, turning occasionally.
While the corn is grilling, prepare the spicy sauce. In a small bowl, whisk together the mayonnaise, sour cream, chopped jalapeños, cilantro, chili powder, lime juice, garlic powder, and cayenne pepper (if using). Season with salt to taste.
Once the corn is cooked, carefully brush the spicy sauce mixture evenly over each ear of corn.
Return the corn to the grill or under the broiler for another 2-3 minutes, until the sauce is lightly toasted and bubbly.
Remove from heat and immediately sprinkle generously with cotija cheese or queso fresco.
Dust with a little extra chili powder if desired.
Serve hot with lime wedges on the side.
Notes
For an even spicier corn, leave some of the jalapeño seeds in or add a dash of your favorite hot sauce to the sauce mixture.
If you don’t have a grill, you can boil or roast the corn in the oven until tender and slightly charred before applying the sauce.
Cotija cheese is traditional, but feta cheese can be substituted if cotija is unavailable.
