Ingredients
Scale
1 tablespoon sesame oil
1 pound ground pork or chicken
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup red miso paste
1/4 cup white miso paste
2 tablespoons soy sauce
1 tablespoon chili bean paste (doubanjiang)
1 teaspoon chili oil (or more to taste)
6 cups chicken or vegetable stock
1 teaspoon sugar
1 pound fresh or dried ramen noodles
4 large eggs
1/2 cup soy sauce for egg marinade
1/4 cup mirin for egg marinade
2 green onions, sliced
1/4 cup corn kernels (optional)
2 sheets nori seaweed
Instructions
Prepare the eggs: Bring a small pot of water to a rolling boil. Gently lower the eggs into the water. Boil for exactly 6 minutes and 30 seconds for a jammy yolk. Immediately transfer eggs to an ice bath to stop cooking. Peel carefully once cooled.
Marinate the eggs: Combine 1/2 cup soy sauce and 1/4 cup mirin in a small container. Place the peeled eggs in the marinade, cover, and refrigerate for at least 2 hours, or preferably overnight.
Start the broth base: Heat sesame oil in a large pot over medium-high heat. Add ground meat and cook, breaking it up, until browned. Drain excess fat.
Add aromatics: Add minced garlic and grated ginger to the pot. Cook for 1 minute until fragrant.
Build the flavor: Reduce heat to medium. Stir in the red miso, white miso, soy sauce, chili bean paste, chili oil, and sugar. Cook this paste mixture for 2 minutes, stirring constantly.
Simmer the broth: Pour in the chicken or vegetable stock. Bring the mixture to a gentle simmer and cook for 10 minutes, allowing the flavors to meld. Taste and adjust seasoning, adding more chili oil for heat or soy sauce for saltiness.
Cook the noodles: Cook the ramen noodles according to package directions. Drain well.
Assemble the ramen: Divide the cooked noodles among four large bowls. Ladle the hot spicy miso broth over the noodles.
Top and serve: Halve the marinated soft-boiled eggs and place two halves on top of each bowl. Garnish with sliced green onions, corn kernels, and a sheet of nori. Serve immediately.
Notes
For a deeper umami flavor in the broth, you can add 1 teaspoon of instant dashi powder along with the stock.
If you prefer a less spicy broth, reduce the amount of chili bean paste and chili oil used in step 5.
Use a high-quality miso paste for the best flavor result in your tare.
