- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (or more for extra spice)
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can white beans (cannellini or Great Northern), rinsed and drained
- 1 (15 ounce) can chicken broth
- Salt and black pepper to taste
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add the chopped onion and green bell pepper to the pot. Cook until softened, about 5 minutes.
- Stir in the minced garlic, cumin, chili powder, oregano, and cayenne pepper. Cook for 1 minute until fragrant.
- Pour in the diced tomatoes (with juice), rinsed white beans, and chicken broth.
- Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for at least 20 minutes, stirring occasionally.
- Season with salt and pepper to your taste before serving.
Notes
- For a thicker chili, remove the lid for the last 10 minutes of cooking.
- Use Great Northern or cannellini beans for the best texture in this recipe.
- Add a splash of lime juice at the end for brightness.
