Ingredients
Scale
6 cups fresh spinach, washed and dried
2 cups fresh strawberries, hulled and sliced
1/2 cup crumbled feta cheese (optional)
1/4 cup sliced almonds, toasted
1/4 cup red onion, thinly sliced
For the Dressing:
1/2 cup vegetable oil
1/4 cup white wine vinegar
2 tablespoons granulated sugar
1 teaspoon Dijon mustard
1 teaspoon poppy seeds
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Prepare the dressing: In a small bowl, whisk together the vegetable oil, white wine vinegar, sugar, Dijon mustard, poppy seeds, salt, and pepper until well combined. Set aside.
Assemble the salad: In a large bowl, combine the washed spinach, sliced strawberries, crumbled feta (if using), toasted almonds, and sliced red onion.
Dress the salad: Pour the desired amount of poppy seed dressing over the salad ingredients. Toss gently to coat everything evenly.
Serve immediately.
Notes
For variations, substitute pecans or walnuts for almonds. You can use goat cheese instead of feta.
If you do not have fresh spinach, use a mix of baby kale and spinach.
To toast almonds, place them in a dry skillet over medium heat for 3-5 minutes, stirring often until fragrant.
This salad pairs well with grilled chicken or salmon for a complete meal.
