Ingredients
Scale
1 lb white button mushrooms, stems removed
4 tbsp unsalted butter, melted
1/2 cup breadcrumbs
4 oz cream cheese, softened
1/2 cup shredded Parmesan cheese
1/4 cup chopped fresh parsley
2 cloves garlic, minced
1/4 tsp salt
1/8 tsp black pepper
Instructions
Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
Wipe the mushroom caps clean. Gently remove the stems and finely chop the stems.
In a medium skillet, melt the butter over medium heat. Add the chopped mushroom stems and cook until softened, about 5 minutes. Remove from heat.
In a bowl, combine the cooked stems, cream cheese, Parmesan cheese, breadcrumbs, parsley, minced garlic, salt, and pepper. Mix until fully incorporated.
Spoon the cheese mixture evenly into the mushroom caps, mounding it slightly.
Place the stuffed mushrooms on the prepared baking sheet.
Bake for 18 to 20 minutes, or until the tops are golden brown and the filling is hot throughout.
Serve immediately.
Notes
You can substitute Brie or Gruyere cheese for some of the Parmesan for a richer flavor.
For extra moisture, brush the tops of the mushrooms lightly with olive oil before baking.
If you prefer a crispier topping, broil for the last 1-2 minutes, watching closely to prevent burning.
