Make the flavor of classic stuffed peppers in a quick, hearty soup. This one-pot recipe uses ground beef, rice, and tomatoes for a comforting weeknight meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 large bell peppers (any color), chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup uncooked white rice
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add chopped bell peppers, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, basil, salt, and pepper to the pot. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. Stir in the uncooked white rice. Return to a simmer, cover, and cook for an additional 15 to 20 minutes, or until the rice is tender and the soup has thickened slightly.
  7. Serve hot, topping each bowl with shredded cheddar cheese if desired.

Notes

  • For a lower-carb version, omit the rice and add 1 cup of cauliflower florets during the last 15 minutes of simmering.
  • Use ground turkey or ground sausage instead of ground beef for a different flavor base.
  • If you prefer a thicker soup, add 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water during the last 5 minutes of cooking.
