Ingredients
Scale
1 pound flank steak, thinly sliced
1/4 cup soy sauce
2 tablespoons mirin
1 tablespoon sesame oil
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 cup broccoli florets
1 red bell pepper, sliced
1 carrot, julienned
1/2 cup snap peas
Cooked rice, for serving
Instructions
In a bowl, whisk together soy sauce, mirin, sesame oil, ginger, garlic, and cornstarch. Add the sliced beef and toss to coat. Let it marinate for at least 15 minutes.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated beef and stir-fry until browned, about 2-3 minutes. Remove beef from the skillet and set aside.
Add broccoli, bell pepper, and carrot to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
Add snap peas and stir-fry for another minute.
Return the beef to the skillet. Pour any remaining marinade over the beef and vegetables.
Stir everything together and cook for 1-2 minutes until the sauce has thickened slightly.
Serve immediately over cooked rice.
Notes
For extra flavor, you can add a pinch of red pepper flakes to the marinade.
Feel free to customize with your favorite stir-fry vegetables.
Ensure your skillet is hot before adding the beef for a good sear.
