Ingredients
Scale
1 (15-ounce) can chickpeas, rinsed and drained
1/4 cup vegan mayonnaise
1 stalk celery, finely chopped
2 tablespoons red onion, finely chopped
1 tablespoon fresh dill, chopped
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon garlic powder
Salt and black pepper to taste
4 slices whole wheat bread or preferred bread
Lettuce leaves for serving
Instructions
Place the rinsed and drained chickpeas in a medium bowl.
Use a fork or potato masher to mash the chickpeas until about two-thirds are broken down, leaving some texture.
Add the vegan mayonnaise, chopped celery, red onion, dill, Dijon mustard, lemon juice, and garlic powder to the bowl.
Mix all ingredients together until well combined and creamy.
Season the salad generously with salt and black pepper. Taste and adjust seasoning as needed for tanginess or savoriness.
To assemble the sandwich, place a layer of lettuce on one slice of bread.
Spoon a generous amount of the chickpea salad onto the lettuce.
Top with the second slice of bread.
Slice in half and serve immediately, or chill for later use.
Notes
For a gluten-free option, serve the filling on gluten-free bread or large lettuce cups.
If you prefer a smoother texture, process the chickpeas briefly in a food processor before mixing in the other ingredients.
Add 1/2 teaspoon of smoked paprika for a deeper, savory flavor profile.
