Ingredients
Scale
1/4 cup chia seeds
1 cup unsweetened almond milk (or other plant milk)
2 tablespoons unsweetened cocoa powder
1 to 2 tablespoons maple syrup (adjust to taste)
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
In a jar or container, combine the chia seeds, almond milk, cocoa powder, maple syrup, vanilla extract, and salt.
Stir the mixture well immediately for about one minute to prevent the chia seeds from clumping at the bottom.
Let the mixture sit on the counter for 5 minutes, then stir again thoroughly. This second stir helps achieve a smooth texture.
Cover the container and place it in the refrigerator for at least 4 hours, or ideally overnight.
When ready to serve, stir the pudding. If it is too thick, add a splash more milk until you reach your desired consistency.
Serve cold with your favorite toppings.
Notes
For a richer chocolate flavor, use high-quality Dutch-processed cocoa powder.
If you prefer a sweeter pudding, increase the maple syrup to 2 tablespoons. For a lower sugar option, use a few drops of liquid stevia instead.
To make this pudding extra creamy, blend the soaked pudding briefly in a high-speed blender before chilling.
Toppings ideas include fresh berries, sliced banana, chopped nuts, or a sprinkle of shredded coconut.
