Ingredients
Scale
1/2 cup tahini
1/4 cup fresh lemon juice
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
4 to 6 tablespoons cold water (use more for a thinner consistency)
1 teaspoon maple syrup (optional, for balance)
Instructions
Combine the tahini, lemon juice, minced garlic, salt, pepper, and optional maple syrup in a medium bowl.
Whisk the ingredients together. The mixture will seize up and become very thick initially.
Slowly add the cold water, one tablespoon at a time, while continuously whisking.
Continue adding water until the dressing reaches your desired creamy consistency. If you want it thinner, add more water. If you want it thicker, add a small amount more tahini.
Taste and adjust seasoning, adding more salt or lemon juice if needed.
Use immediately or store in an airtight container in the refrigerator.
Notes
For a thinner dressing, use up to 8 tablespoons of water.
For a thicker sauce suitable for dipping, start with only 3 tablespoons of water.
If the dressing separates during storage, whisk vigorously before serving to restore the emulsion.
