Drain the ricotta cheese in a fine-mesh sieve over a bowl for at least 15 minutes to remove excess liquid.
Place the drained ricotta, softened cream cheese, 2 tablespoons of olive oil, lemon zest, salt, and pepper into a food processor.
Process until the mixture is completely smooth and airy, scraping down the sides as needed, about 2 to 3 minutes.
While the dip processes, toast the walnuts in a small, dry skillet over medium heat for 3 to 5 minutes, stirring often, until fragrant. Remove from heat.
Transfer the whipped ricotta mixture to a shallow serving bowl.
Drizzle the top generously with hot honey.
Sprinkle the toasted walnuts and chopped rosemary (if using) over the top.
Drizzle with a little extra olive oil before serving immediately with bread or crackers.
Notes
For best texture, ensure your cream cheese is fully softened before blending.
If you do not have a food processor, you can use a stand mixer with the whisk attachment, but the texture may take longer to become completely smooth.
Serve this dip at room temperature for the best flavor and spreadability.
