You deserve a beautiful meal tonight. This easy zucchini soup recipe delivers a velvety, comforting bowl using fresh zucchini, ready in under 30 minutes. It is a healthy, low-calorie option perfect for a light lunch or weeknight dinner.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 3 large zucchini (about 2 pounds), chopped
  • 4 cups vegetable broth
  • 1 medium potato, peeled and chopped (for natural creaminess)
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup heavy cream or unsweetened cashew milk (optional, for extra richness)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  3. Add the chopped zucchini, vegetable broth, chopped potato, and thyme to the pot. Season with salt and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the zucchini and potato are very tender.
  5. Remove the pot from the heat. Carefully use an immersion blender to blend the soup directly in the pot until it is completely smooth and silky. Alternatively, transfer the soup in batches to a standard blender and blend until smooth, returning it to the pot.
  6. If you are using cream or cashew milk, stir it in now. Heat gently for 1 minute, but do not boil. Taste and adjust seasoning as needed.
  7. Serve your creamy zucchini soup hot, garnished with fresh parsley. You have made a feast just for you.

Notes

  • For a dairy-free, vegan version, skip the heavy cream and use unsweetened cashew milk or 1/4 cup of soaked, blended cashews for texture.
  • If you want a low-carb soup, substitute the potato with 1/2 cup of cannellini beans for thickness.
  • This soup tastes wonderful the next day, making it great for meal prep.
